AU REVOIR

I'll be honest, it's been on my mind for sometime now!  And now, as my husband and I embrace a new path, planning our first pregnancy, it seems appropriate to say farewell to the beautiful six years I've spent on this blog sharing my up's and down's exploring all things raw.

The three weeks I recently spent at Hippocrates Health Institute has given me a lot of time to self-reflect and really think about the new direction my husband and I are getting ready to embark on.


It has been an amazing experience, sharing a part of myself (my ambitions and struggles) with you, my readers.  The journey no doubt has created the perfect segue connecting me to the next phase of my life.

There is so much I will miss about this chapter in my life  for it has given me such a remarkable and beautiful glimpse into nature, spirituality, my own being, and what's truly possible.  My only hope now is to share some of this knowledge, experience and wisdom with my future baby(s) and grandbaby(s).
And so it is with a heavy heart, yet a light spirit that I say my final goodbye.

DIET IS ONLY HALF THE STORY

Or perhaps it's even only a third.  More and more I'm starting to realize that health is less about what we eat, and more about how we live!

Nutrition is a crucial component to healthy living, of course, but it's even more relevant in the context of lifestyle.  It is equality important what we choose to think, how we feel, and who we surround ourselves with. If you’re eating all the right things (which can vary widely depending on who you ask), but you're holding on to negative or resentful emotion, you may not achieve your desired level of health no matter how "perfect" you believe your diet to be.  Stress, lack of physical movement, emotional pain, spiritual disconnection are just a few factors outside of diet that affect the quality of our health and well-being. 

For this reason, I would love to start shifting the conversation away from just raw foods and recipes, to a broader understanding of what healthy living is all about. You might see me talking more and more about things like joy, and creating a fulfilling spiritual practice.  In fact, if you haven’t visited the Raw Radiance website in a while, you may want to take a look (as it won’t be around for much longer).  I am currently in the midst of rebranding with a new direction and focus.  Stay tuned!  

If you have been following my blog, you may have noticed that I've taken some time off in recent months (more like an entire year).  There are several reasons behind my decision to step away.  Everything from feeling uninspired in my own diet and lifestyle, and wanting to be more fully engaged in my personal life.  But mostly, I think I just simply burned out.  

During my time away from blogging/social media, I have tried to regroup and redefine my vision and direction for my life.  I have spent a lot of time exploring so many other interests like interior design and reading up on parenting.  My hunch is that being a mama is the next big chapter in my life ;)

As far as my lifestyle goes, here's where I am today.  My diet is varied and I'm far more flexible with my eating habits.  I don't care to define myself by any particular lifestyle or diet.  And even though my path began with an interest in raw foods, I no longer feel the need to limit the conversation to just diet and nutrition. There's just so much more to health! 

I still prefer a plant-based approach as the core foundation of my diet, with a strong focus on dark leafy greens and algae (spirulina anyone?).  I have kept the basic principles of the raw food diet (green juices, green smoothies, green salads, etc).  In fact, juicing continues to be a daily foundational practice for me, as it always has been.  But I now enjoy animal products on occasion as well. I find that unpasteurized eggs, raw goat/sheep yogurt, wild-caught sardines, and yes, locally-sourced organic meat have beneficial nutrients harder to come by on a strictly plant-based diet.  

On the other hand, I'm also intrigued with the concept behind Dr Fuhrman's nutritarian diet. His focus is on maximizing the micronutrient concentration in foods per calorie count.  You can read more about that on www.drfuhrman.com.  However, I do feel this approach is a bit too strict for this stage in my life.  Restricted dieting is not exactly something I'm interested in.  My goal is primarily balance and flexibility in all areas of my life, especially diet.  

So here I am, on a quest to redefine my definition and approach to health.  My aim is to deepen my understanding of health and well-being from a broader perspective.  And so the journey continues!

TO BE A 100% RAW, OR NOT TO BE?

One of the most common questions I get is, "Do I need to go 100% raw?"

In my opinion, not necessarily! It depends on what you are trying to accomplish.

For those who are dealing with an illness or disease, it may be necessary to intervene with a strict protocol to detoxify the body on a cellular level... to reverse the condition and heal the body.


For the majority of us, incorporating 50-70% raw fruits and veggies into our diet is optimal for long-term success.


The problem with trying to attain a 100% raw diet as a percentage, is that it’s easy to lose sight of whether or not the diet is balanced. Living on cacao, dehydrated crackers, and raw desserts is technically 100% raw, but is that healthy? For me, it’s less about the percentages and more about keeping my diet balanced.

The foundation of my diet is primarily leafy greens, in the form of green juices, green smoothies and green salads. I try to eat high water-content fruits and veggies in place of dehydrated foods. I also make sure to get in sea vegetables and micro-algae like spirulina and chlorella.


My non-raw staples include steamed/backed root vegetables, gluten-free grains, legumes, eggs and goat/sheep yogurt, etc. (Yes, I'm not vegan!)


The idea of all or nothing, or that all cooked food is poison is simply a thing of the past! It is far more important to focus on getting high quality, organic whole foods.

It is equally important to be at peace with the lifestyle we have chosen. If we're always stressed out about not eating perfectly enough or in a constant state of guilt, we've missed the point! I often see people struggle with raw foods thinking they have to be perfect 100% of the time, trying to live up to some unrealistic ideal. But it's not about perfection, it's about enjoying a healthy and balanced lifestyle... which is absolutely possible on a high-raw diet.


So before you jump in 100%, make sure to first lay down a strong, healthy foundation for your diet. If you do choose to go a 100% raw, I admire your courage. Just keep in mind that the raw food lifestyle is all about creating a healthy and happy life. And definitely remember to keep it balanced!

COCONUT-BANANA & BLACKBERRY PARFAIT

Coconut-Banana & Blackberry Parfait

1 banana
1 young Thai coconut (meat only)
½ cup walnuts (soaked)
Juice of ½ lemon
1 Tbsp raw honey
¼ tsp vanilla extract
Pinch sea salt

Soak walnuts 6 - 8 hrs, rinse and drain.  Crack open a coconut and scoop out the meat (reserve the water for drinking).  Blend walnuts and coconut meat along with all remaining ingredients until smooth.  Set aside.

½ cup blackberries
1 tsp raw honey

Blend blackberries with honey in a mini-blender!  Layer a dessert glass and serve.  Enjoy!

BRUSSELS SPROUTS APPLE SLAW

1 cup brussels sprouts
1 apple
1 celery stalk
1/4 cup minced red onion
1/4 cup black currents (or raisins)

Shred brussels sprouts, apple and celery in a food processor.  Combine with minced onion and currents in a separate bowl and mix together.

Vinaigrette
2 Tbsp olive oil
1 Tbsp apple cider vinegar
1 tsp Dijon mustard
1/2 tsp raw honey
Pinch Himalayan salt / black pepper

Whisk vinaigrette ingredients and toss with the salad. Enjoy!

OFF TO HIPPOCRATES HEALTH INSTITUTE

In just a few short days, one of my long awaited dreams will finally come to fruition.  I will be arriving at the Hippocrates Health Institute for a 3-week Life Transformation Program.

The dream has been a long time in the making, six years to be exact.  From the very first time I heard about the program, back in 2007, I knew this was my destined next BIG step in my exploration of health and nutrition.  (See my brief mention of it in a 2009 post titled Manifesting A Dream.) 

What better time to experience this amazing program than in preparation for a healthy first pregnancy?  I love how destiny seems to align so appropriately - the timing couldn't be more perfect.  

I put HHI smack in the middle of my vision board long ago, but for six LONG years the dream just sat there waiting for me. And when I say waiting, I literally mean it was just sitting there waiting for me to get off my ass and make it happen... ; )

By the way, for any of you who still think manifestation is the process of dreams magically falling in your lap... I've got news for you!  The real process of manifestation is owning your dreams (and the responsibility that comes with making it happen).  Took me a while to catch on too. 

So that's what I did.  I took my destiny, my dream, into my own two hands, set up a savings account, and got to work!  

Luckily, the timing turned out great, as my hubby and I are looking to start a family in the near future.  Perfect opportunity for a complete mind, body and spirit cleanse!  

I should mention, that even though the Hippocrates program focuses on a strict raw vegan protocol, I don't intend to proceed with a vegan pregnancy.  I'll leave the details regarding my views on diet and pregnancy for another post.  But I will say that my intention, as of this point, is to incorporate a few select animal products into my diet (in "therapeutic" doses) following the cleanse.  I'll probably have to explain the "therapeutic" part as well.  

In any case, I thought about blogging during my cleanse at the Hippocrates Health Institute, but I may just take those three weeks to really immerse myself into the program and enjoy my stay there.  I do hope to follow up with a post upon my return however... so stay tuned!

RAW FOOD & YOGA

A match made in heaven!

Regardless of the style of yoga practice you prefer, I have found that a predominetly raw food lifestyle and yoga are a perfect complement to one another.  The union of these two are unlike anything else.  

I often enjoy some fresh coconut water before my yoga practice, and I like to end my practice with a low-glycemic green juice for hydration.  It makes me feel like I'm floating of clouds once I'm done!

Yoga in Sanskrit translates to “union”.  The practice is designed to unite breath and posture, which in turn creates unity and balance in mind, body and spirit.  Yoga, of course, also increases flexibility.  I like to think or define the practice of yoga as a meditation in movement.

Here's a fun one to try... the Five Tibetan Rites.

I first heard of the Five Tibetan Rites from my friend and fitness guru, Larisa Simpson of EuroFit LLC, who not only helped me to lose weight, but has also taught me, among other things, to love and honor my body.  If you have yet to discover the Five Tibetan Rites, it’s a beautiful routine to add to your yoga practice. 

The Five Tibetan Rites, aka the Five Rites, are a form of yoga practiced by Tibetan monks for centuries for healing, rejuvenation, and longevity.  The monks who practiced the Five Rites reportedly lived long and vibrant lives.  Unlike the traditional yoga practice of India, the Five Rites emphasize “a continuous sequence of movement” rather than “static positions”.


The Five Rites are said to balance the seven energy Chakras centers to promote a free flow of prana (chi energy) revitalizing mind, body and spirit.  A daily practice of the Five Rites can increase energy and vitality, restore emotional and mental clarity, help one sleep more soundly, increase strength and flexibility, balance hormonal levels, assist the body in detoxification and weight management, and enhance a sense of harmony and well being.

SEAWEED SALT


Looking for an extra dose of minerals to season your favorite foods?  This quick and easy recipe takes only a few minutes to make. 

Simply grind up some dry kelp and dulse (equal parts) using a small coffee grinder, and double the volume with added Himalayan crystal salt.  Grind everything down to a fine powder and use as an alternative to table salt. 

Caution:  Start with a pinch! Seaweed has a distinct flavor that can easily overpower any dish.

PAPAYA FACE MASK

The other day I found myself craving a juicy papaya, so naturally, I made a trip to a local heath food store and picked out a nice soft organic papaya.  But when I got home and cut it in half, it turns out it wasn't ripe at all... the flesh was pale yellow and tough!  Sigh.  

I have to say, I was pretty saddened but I wasn't discouraged!  Instead, I got creative and made myself a beautifying papaya face mask using a few organic ingredients I had on hand.  My skin felt so amazing, I thought I'd share the recipe.  Looks like my skin was the one craving the fruit ; )  

Papaya Face Mask

1/2 small unripe papaya (peeled, seeds removed)
1 Tbsp raw honey
1 tsp coconut oil

Using a mini blender, blend all ingredients until smooth and creamy.  Apply a thick layer avoiding the eyes, leave on for 20 minutes.  Rinse with warm water.  

Enjoy this beautiful and nourishing treatment before bed!

A SUPERFOOD UNLIKE ANY OTHER


It's not very often I take time to promote products and webinars on my blog, but I just can't help myself on this one!  

I recently came across a FREE online webinar discussing the many health benefits of micro-algea, and I honestly have to say the information is PRICELESS.  

I've always understood their role in health, but I had NO idea just how powerful micro-algae are!  Lets just say they were routinely used to treat children of radioactive poisoning in the aftermath of Chernobyl.  That's beyond incredible!  I can't recommend this information enough.  



In a world where superfood trends come and go, there's only a few ancient superfoods that have withstood the test of time.  If you were to include just ONE superfood staple into your diet, miro-algae would be it.  They are truly in a league of their own.

Here's one of my favorite recipes using micro-algae spirulina.  I drink it like a shot first thing in the morning, right after my green juice.


Spirulina Spritzer 

1/4 cup (2 oz) coconut water kefir
1/2 tsp spirulina powder
Squirt lemon or lime juice

Stir in and dissolve the spirulina powder in a small glass of coconut water kefir with citrus, and enjoy!


The carbonation from the fermented, probiotic-rich coconut kefir is just divine!  It's a nice complement to the mineral-rich spirulina, which is masked by the fizzy kefir and citrus.

TIPS FOR AN ECO-CHIC WEDDING



Ladies be prepared, unless you're planning a backyard wedding, going eco-chic will likely cost you a pretty penny!  Not that there's anything wrong with a casual low-key wedding.  In fact, I almost wish I would have gone with a small outdoor theme after the stress of planning mine!  Lol.

It's frustrating enough couples have to face outrageous wedding mark-ups;  add a "green" label on it and you may expect a significantly higher price tag.
  
This is not to say that going eco isn't worth the money or the effort.  On the contrary, with a little extra time and careful planning you can wow your guests with a stunning eco-friendly event.  Just keep some practical tips in mind. Here are a few things I made sure to include to make my BIG day eco-fabulous!

1) Electronic invitations and thank you's! I used Pingg.com for a clean, professional look.  It comes with an option to digitally open your invitation from an envelope - super cute!  Plus, you can upload your own designs.
  
2) A wedding website for all the details and info your guests will need.  Here's my personal wedding website that included much of the necessary info without having to mail out instructions.  MilaHugh.weebly.com

3) Electronic gift requests. Wedding registries are overrated!  Who needs all that stuff?  We opted for a honeymoon gift fund that our guests could contribute to online!

4) Handcrafted candle holders! I made the most adorable little candle holders using recycled honey glass jars (see photo above).  Unfortunately they never made it to my wedding (lets just say mom didn't like the vintage theme I was going for).  Needless to say, they're currently up for sale on Etsy.com

5) Handmade favors.  It's always more personal when you can make something for your guests.  But if time and money is an issue, do what I did... use reusable spice jars filled with your favorite dried fruit.  I used unsweetened, organic dried cherries!  Yum.

6) Locally owned and operated businesses with environmentally-friendly practices.  Even if you can't afford a specific "green" product they offer, it's nice to support their efforts anyway.  For instance, booking with a flower boutique that offers both conventional and sustainably grown flowers - you may not be able to afford the sustainable option but you appreciate they offer it.

7) Venue and caterer with a zero-waste policy (this typically includes a recycle and compost service).  Many venders I spoke with who offer this service don't even charge extra for it - BONUS $$$ points!

8) Reusable rentals (linens, plates, silverware, etc).  Yes, this adds serious dollars to your event, but I can't imagine all the waste without it.  Of course, you can always use compostable plates and silverware.  I've seen some elegant options out there!

9) Botanical hair and beauty salon with natural and organic products.  This one can be tricky and costly, but worth it if you can afford it.

Valentine's Chocolate Truffle Mousse
(from the Raw Chocolate & Wine ebook)


1/2 cup cashews (soak 2 hrs)
1/2 cup raw cacao powder
1/4 cup water
2 medjool dates, pitted (soak 20 min)
1 Tbsp raw honey
1 Tbsp melted coconut oil
1/2 tsp vanilla extract
Pinch Himalayan salt


Soak cashews, rinse and drain.  Next, soak pitted dates in 1/4 cup water (do not discard water).  Blend all ingredients thoroughly, including water from dates, until smooth and creamy!  Add more water if needed for desired consistency.  Serve with fresh strawberries.

RAW CRANBERRY SAUCE (2-ways)



Cranberry Sauce (Chunky Variation)

3 cups fresh cranberries
1 heaping Tbsp raw honey 
1/4 orange, peeled and seeded
1/4 tsp cinnamon

Process thoroughly using a standard food-processor.   

*Note:  Orange adds a floral depth, but can slightly overpower the cranberries.  Juice of orange carries a milder flavor profile but would result in a runny sauce. 

Cranberry Sauce (Pureed Variation)

3 cups fresh cranberries
4 medjool dates, pitted 
1/4 cup juice of orange
1/4 tsp cinnamon

Soak dates in orange juice for 10 min to soften.  Transfer dates (with juice) into a high-speed blender.  Add cranberries and blend until smooth and creamy.

LAUNCHING MY BRAND NEW WEBSITE

I'm back, and ready to launch my new RAW RADIANCE website!  The official release date is coming up in just a couple of days on Nov 22nd, 2011 

The website has been in the works for some time now, and I'm happy to say it's finally here!  Although ironically, the completion of the site has come at an interesting time in my life.

In case you're wondering what in the world I've been up to over the past few months, I have some exciting news!  I just got married ♥  

Hugh and I were engaged in May and jumped head first into planning our eco-inspired 11.11.11 wedding.  (Details and photos coming soon!)  

So not only have I embraced a new chapter in my life with my new husband, but I've also been contemplating a new direction for Raw Radiance over these past few months.

After much thought and some soul searching, I've decided to shift my focus and broaden my message to encompass the bigger picture of health.  (Of course I'll still share my raw recipes!) 

Moving forward, I'm hoping to put a stronger emphasis on spirituality and lifestyle, because there simply isn't a one-size-fits-all diet, and health is about so much MORE than just what we eat!  It is equally about what we think, how we feel, who we surround ourselves with, and the environment in which we choose to live.

In the upcoming weeks and months I'll be sharing more on my new philosophy for living a healthy and vibrant life.  Until then, please stop by and check out my NEW website on all things raw food, launching Nov 22nd, 2011.

BLUEBERRY-BANANA GRANOLA

So I've got a fresh batch of my absolute favorite granola EVER in the dehydrator at this very moment, and I'm trying my very best to keep my hands out of it!

As long as I've got some time to spare, I figure I might as well share this super tasty recipe... hoping it'll keep me busy and my hands out of the kitchen long enough for the granola to finish dehydrating!

So here it is.  And just a heads up, you may want to make yourself a second batch!  Start with 2 cups of your favorite nut and seed combo.  Here's what I typically use...

1 cup almonds 
1/2 cup walnuts
1/4 cup pumpkin seeds
1/4 cup sunflower seeds

Soak the nut/seed mix overnight (8 hours) using fresh, clean water.  Rinse thoroughly and drain.  Transfer into a large glass bowl.  Next, make a sweet banana coating...

3 pitted dates (soaked 10 min to soften)
1 ripe banana
1 Tbsp raw honey
Pinch Himalayan salt

Soak dates and discard the water (or drink it).  In a blender, combine dates, banana, honey, salt and blend until smooth and creamy.  Transfer the mixture into your nut/seed bowl and give it a stir.  

Mix in the following ingredients and dehydrate 18-24 hours on 118 degrees F (depending on how chewy or crunchy you like your granola).

1 cup blueberries
1 ripe banana, diced

Final step. Try not to eat it all before it's done dehydrating!

HOW I GOT HERE

My family emigrated from the former Soviet Union when I was just a young girl.  As my parents struggled to make a living in a new country, my father often brought leftover pizza home from his delivery job.   

On weekends I remember exploring endless varieties of packaged foods at the supermarket.  I was very intrigued, as grocery superstores did not exist in our small Russian town.  Like many, we were drawn in by the convenience of cheap T.V. dinners.  

It wasn’t long before I started to develop addictive tendencies toward processed foods.  And sure enough, by my teens I found myself frequently binge eating and yo yo dieting. 

In my mid-twenties I began transitioning to a vegetarian diet, and even though I knew better, I ended up turning into a junk-food vegetarian.  I justified my eating habits thinking, "surely I'm healthier than the average person if I cut out meat, right?"

But I started gaining weight and eventually found myself in and out of depression.  I was overweight, in a relationship I wasn't happy in, climbing the corporate ladder – I felt trapped.

I had reached a low in my life, where even my closest friends found my negativity draining.  So I continued to mask my pain with the comfort of food, while deeply resenting my destructive eating behavior.

It felt as though food was at the center of everything that was wrong in my life.  If only I could release this addiction, I’d no longer feel tempted and manipulated by food.  I would slim down and feel comfortable in my own skin.  I would have the confidence to pursue the life I had always envisioned.  I blamed my compulsive behavior with food for not having achieved any of these things.

The final straw was when I looked up my Body Mass Index (BMI) and realized that at 5’2” and 170 pound, I was in the first stages of obesity.  I immediately signed up with the L.A. Weight Loss program but I strongly resisted their eating plan, which heavily focused on processed energy bars.  I was faced with the realization that I desperately needed a new start with a focus on health, not just another weight-loss gimmick.  

Food represented something destructive in my life, and I needed to change that relationship.  I had to associate food with something positive and healing.  More importantly, I knew that if I didn’t change the direction of my life, I would end up settling for a life I didn’t want.  I desperately needed to feel purpose and meaning again.

I sat down and reevaluated every aspect of my life.  Who was I living for, anyway?  Was I trying to please my family, live up to the expectations of my peers, or fit some ideal that our culture values?  As far as I could tell, the ideals I was trying to live up to were only suffocating me.  My life was headed down the wrong path fast.   

I had to create my own set of values to live by.  I needed a strong, positive belief system that would carry me through on a path to fulfillment.  So I defined how I wanted my ideal diet and lifestyle to look like, and what real health meant to me.  It was then that I realized I wanted to pursue healthy living.   

I felt liberated knowing I could finally start living my life on my own terms, for my happiness.  As soon as I made that decision, Life immediately embraced me with guidance. 

I was already familiar with raw foods when I attended a lecture that mentioned a book by Victoria Boutenko, author of Green for Life.  I picked up the book as it was being passed around.  To my surprise, I instantly recognized Victoria’s picture on the back cover.  

Victoria Boutenko, who founded the green smoothie revolution, is also a first generation Russian immigrant.  Years ago when Victoria’s family lived in Colorado she was acquainted with my mother.  She gave a lecture on raw foods for a few of my mom’s friends at our home.  I was only in my early teens but I remember her lecture   quite well.  This was long before “raw foods” was a commonly used term.  

What’s interesting is that 14 years later Life would bring me back to Victoria’s message – coincidence?  I think not!  Shortly after reading her book, I found out about the Living Light Culinary Arts Institute specializing in raw vegan cuisine.  By that point, I could no longer ignore the obvious.  I had to follow the guidance. 

So I did the unthinkable – I walked away from my life.  I called off the relationship, quit my 9-year career, cashed out my 401k, packed up everything into storage, and took off to pursue my passion for healthy living. 

I completed the Gourmet Raw Food Chef & Instructor certification at the Living Light Culinary Arts Institute, and since my return from completing the program I have maintained a primarily high-raw diet. 

Eating a clean, natural diet has connected me back to my body.  Food has taken on a whole new meaning for me.  But I recognize that it’s an ongoing journey.  I try to stay flexible as I continue to evolve and fine tune my diet and lifestyle.  I have learned to let go, and not get down at times when I’m not at my best behavior.  I give myself love and understanding every step of the way. 

Issues around eating, whether expressed through binging or starving, are a form of punishment and self-sabotage.  As I continue to love and accept myself, I find I have far less self-destructive tendencies.  Because after all, I have a choice, the choice to live vibrantly healthy!

LEMON-THYME ICE CREAM

What do you do when you're blessed with an abundance of fresh herbs and you're looking to get creative?  You make raw ice cream!  

That's right, incorporating fresh herbs into raw desserts has become one of my latest intrigues.  It's so much fun discovering new flavor infusions.  The possibilities are endless!  This one is a citrus-thyme combo – fragrantly sweet, slightly zesty, and oh so divine! 

Start by making your own homemade thyme infused raw honey... 

Lemon-Thyme Ice Cream

1/3 cup raw honey
2 Tbsp fresh thyme, minced

Stir in fresh, minced thyme into raw honey and allow to infuse overnight.  

1/2 cup cashews (soaked 2 hr)
1 cup water
Juice of 1 lemon
1/4 cup melted coconut oil
Pinch Himalayan salt


Soak cashews to soften, rinse and drain.  Blend all ingredients (expect the thyme infused honey) until smooth and creamy.  Add honey in at the very end and blend on low to incorporate.  Pour into an ice cream maker, following the manufacturer's instructions.  That's it!

*If you don't have an ice cream maker, you can freeze the mixture in a glass container overnight... comes out just as good!
