I've had a few people recently ask me what I typically eat on a given day. So I thought I'd share some of my favorite staples.
Although my diet varies seasonally, there is one thing I'm very consistent with... GREENS! No matter what I'm eating on any given day, I always make sure to start my day off with a green juice followed by a green smoothie, and I always try to sneak in a green salad at some point in my day.
Here's my fave green juice recipe (Juice of Radiance), and my fave green smoothie (Berrylicious Smoothie). As far as salads go...
Oh those poor salads, they're so misunderstood! When people think of salads, they typically think of wilted lettuce and a few slices of onion and tomato, drenched with generic dressing... yuck!
But when you can master the art of salads and dressings, a whole new world opens up! Don't be afraid to get creative. Load up on your favorite veggies and make a hardy meal of it.

Here's a tasty salad with a creamy oil-free dressing I absolutely love!
Goji Salad & Avo Citrus Dressing
4 cups mixed greens
1/2 cup goji berries (soaked 10 min)
1/4 small onion, thinly sliced
Small handful pecans, coarse chopped
DRESSING
1/2 avocado
Juice of 1 orange
Juice of 1 lemon
1/2 Tbsp minced onion
1/4 tsp sea salt
Pinch cayenne
1/2 cup goji berries (soaked 10 min)
1/4 small onion, thinly sliced
Small handful pecans, coarse chopped
DRESSING
1/2 avocado
Juice of 1 orange
Juice of 1 lemon
1/2 Tbsp minced onion
1/4 tsp sea salt
Pinch cayenne
Soak goji berries in 1/2 cup filtered water to soften, discard water. Arrange mixed greens along with onion slices on two large plates. Blend dressing ingredients and pour over mixed greens. Garnish with pecans and goji berries... enjoy! (Serves 2)
